  • 1 (15-ounce / 425g) can chickpeas, rinsed and drained
  • 1 (14.5-ounce / 411g) can diced tomatoes, undrained
  • ½ cup vegetable broth (or water)
  • 6-8 cups fresh spinach (about 5-6 oz / 150-170g), roughly chopped if leaves are very large
  • Juice of ½ lemon
  • Salt and freshly ground black pepper to taste
  • Optional: Fresh parsley or cilantro, chopped, for garnish

Instructions:

  1. Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
