Ingredients:
- 1 tbsp olive oil
- 1 medium onion, chopped

- 1 (15-ounce / 425g) can chickpeas, rinsed and drained
- 1 (14.5-ounce / 411g) can diced tomatoes, undrained
- ½ cup vegetable broth (or water)
- 6-8 cups fresh spinach (about 5-6 oz / 150-170g), roughly chopped if leaves are very large
- Juice of ½ lemon
- Salt and freshly ground black pepper to taste
- Optional: Fresh parsley or cilantro, chopped, for garnish
Instructions:
- Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
